The Care and Feeding of Wood or Bamboo Cutting Boards

Cutting boards are some of our favorite and most used kitchen tools. Here are some tips for reconditioning and maintaining your cutting boards:

Never put a wood or bamboo cutting board in the dish washer.

Hand wash your cutting board with warm water and dish soap. While the board is still damp, sprinkle coarse salt all over the board.

Slice a lemon in half and scrub the board with the lemon cut side down.  Let the paste sit on the wood for a couple of hours or over night. The paste created by the salt and lemon juice will sanitize and deodorize the wood. Rinse the board with clean water and let it dry thoroughly. Generously apply mineral oil with a paper towel or clean cloth. Let the mineral oil soak into the wood for a couple of hours or over night. Food safe mineral oil can be purchased at any pharmacy or supermarket. Don't use vegetable or nut based oil as it will spoil and turn rancid causing an unpleasant smell, and will change the taste of the food you are preparing. Buff the board with a paper towel or clean cloth and enjoy your refurbished cutting board.
